Is Ice Cream Gluten-Free?

The basic ingredients of ice cream are gluten-free: milk, cream, and sugar, with eggs or a gum (like guar gum or tara gum) added in some cases. If it is a simple, natural ice cream, flavorings like natural vanilla bean and chocolate are also gluten-free. But unfortunately, ice cream ingredients are rarely this simple and natural anymore, and even natural ice creams may contain ingredients with gluten in them, the most obvious that comes to mind is chocolate chip cookie dough. This classic gluten-free potato salad is easy to make and lighter than the version I remember as a kid, but it still has the nostaglic flavor I crave. Mediterranean Quinoa Patty

These patties have a light flavor and a slightly crunchy texture thanks to the quinoa. The red peppers, white beans and seasonings help give them a Mediterranean flair. I like them best garnished with fresh garden tomatoes, basil and a light drizzle of olive oil, but feel free to garnish them with whatever veggies or herbs sound good to you. These patties freeze well, so you may want to keep some on hand for a quick healthy meal.
