Diced apple and toasted walnut pairs together wonderfully. Add cooked quinoa, some chives and a light dressing and now you have a healthy, easy and satisfying side dish or snack. The crisp texture and tang of the diced apple works really well with the quinoa, and the chopped, toasted walnuts finish this dish perfectly.

While there are many fun gluten-free recipes for warm summer picnics, one of my traditional favorites is a good old fashioned potato salad. This classic gluten-free potato salad is easy to make and lighter than the version I remember as a kid, but it still has the nostaglic flavor I crave. I love this recipe for summer holidays or for picnics. Even my husband, who isn’t crazy about mayo, likes this salad.

Thanks to the salt, crunchy texture and mild flavor they really do taste like a chip, but they are a much healthier version. Kids and picky adults may even like kale prepared like this!
