This vegetarian chili is eye-catching with the deep, rich burgundy color of the base blended with the orange of the yams and the dark, purple color of the black beans. Mediterranean Quinoa Patties

Mediterranean Quinoa Patty

These patties have a light flavor and a slightly crunchy texture thanks to the quinoa. The red peppers, white beans and seasonings help give them a Mediterranean flair. I like them best garnished with fresh garden tomatoes, basil and a light drizzle of olive oil, but feel free to garnish them with whatever veggies or herbs sound good to you. These patties freeze well, so you may want to keep some on hand for a quick healthy meal.

Indonesian Peanut Sauté

Indonesian Peanut Saute

I love the flavors in this dish and apparently my husband does too, because he is always excited when I make it. The peanut, ginger, garlic, curry and the soy sauce blend together wonderfully in this dish to give it an almost addictive quality. The carrots help provide a slightly sweet, crunchy, fresh quality. I usually always want seconds of this, but I also want to save enough to enjoy the next day for lunch, as it is wonderful leftover too.
