Gluten-Free Mediterranean Pita Pizza

This pizza may be gluten and dairy-free, but the wonderful blend of flavors and textures make this an incredibly flavorful and satisfying meal.

This isn’t a traditional pizza, instead it’s a fun new take on an old favorite. Unlike traditional pizza this version is served cold. Instead of using sauce, typical pizza toppings and cheese, this version uses hummus as the sauce, fresh vegetables including lettuce and avocados, and a satisfying creamy tahini sauce drizzled on top.

This is a fun summer meal because it’s served cold and because of all of the fresh veggies on it, but we actually enjoy it any time of the year. My husband and I both love this recipe! I hope you enjoy it as much as we do.

If you don’t have a favorite gluten-free pizza crust, I recommend Bob’s Red Mill Gluten-Free Pizza Crust mix. It’s made with at least some whole grains, and it’s good for anyone looking for a dairy-free crust that can also be made without eggs.

Gluten Free Medeterranean Pizza

Ingredients

For The Pizza

  • 1 12-inch baked gluten-free pizza crust (or equivalent GF flatbread)
  • 1 cup hummus
  • 2 heaping cups chopped fresh romaine or red leaf lettuce or spinach
  • 1 cup quartered cherry or grape tomatoes or 1 diced red pepper
  • 1/2 cup diced cucumber
  • 1/4 cup quartered kalamata olives (optional)
  • 1 avocado diced
  • 1/3 batch of tahini sauce (see recipe below)

For The Tahini Sauce

  • 1/4 cup sesame tahini
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1-3 tablespoons water
  • 1/4 teaspoon garlic powder
  • pinch of salt

Instructions

For The Pizza

Evenly spread hummus on baked gluten-free crust.

Add chopped greens of choice, tomatoes or red peppers, cucumber, avocado and olives (if using), distributing all these ingredients evenly.

Drizzle tahini sauce over pizza.

If you like pepper, grind a little fresh pepper over the top.

For The Tahini Sauce

Mix the tahini, garlic powder and salt in a small bowl with a fork until it is smooth with no lumps.

Add olive oil, lemon juice, water, salt and garlic powder and mix again. Start with one tablespoon of water, if the sauce is too thick add enough to thin it out to desired consistency. I usually end up adding 2-3 tablespoons of water to get the consistency I like.
